Okay so just wanted to share that tonight i have made banana and strawberry muffins and i am so pleased with the results i just had to tell you all! The rose in the oven so nicely that they could be shop bought and they taste gorgeous. I have never been able to get the knack of baking cakes so these are my triumph! Yum Yum.

Well done, I’m not v good at baking but I keep trying because I think somewhere inside there is a Queen of Cakes trying to get out, she’s not shown her face yet though lol, will persevere though. The last thing I baked was a After Eight Mints Cheesecake, took lots of prep, cost a fortune, n took ages to cook, got it out the oven walked across to put in fridge, tripped over my little dog n the cake went everywhere, couldn’t salvage even a slice, honestly was like something out of a slow motion cartoon lol.

Wow, i feel like a famous chef being asked for my recipe lol (it’s not actually mine (its from some magazine) but i am taking all the credit!)

Strawberry and banana muffins - serves 12

-325g plain flour
-1tbsp baking powder
-Half a tsp bicorbonate of soda
-pinch of salt
-175g caster sugar
-250g natural yoghurt (i didn’t have any of this so i just put bit of full fat milk into the mixture until i thought it looked right think i used about 200ml but just add little bits at a time)
-100g melted butter
-2 medium eggs, beaten
-1 large banana, peeled and diced
-150g strawberries, green top removed, and sliced.

1)Preheat oven to 190c/375f/gas 5
2) Seive together the flour, baking powder, bicarbonate and salt into a large bowl
3)In another bowl mix together the sugar, yoghurt(or milk), melted butter and beaten eggs
4) Pour the wet ingredients into the dry and mix gently. Hlaf way through mixing add the bananas and strawberries-do not over mix.
5) Divide the mixture between 12 paper cases in a muffin tray (i used a yorkshire pud tray same difference to me)
6) Bake for 15-20 mins, until golden
7) Leave to cool and enjoy!

I also left mine in for an extra 5 mins but turned the over right down as apparently this stops things like cakes and yorshire puds etc from sinking when you open the oven door (well so said some chef on this morning i think it was lol)

Hope it all goes well and if i can do it and they taste good then it must be a fool proof one!

Brilliant! Glad you liked them i was a bit worried giving out the recipe then i thought well what if everyone thinks they’re horrible lol. But looks like they are a winner.

HI there -  I also gave the recipe to a colleague and she only had a small banana so she added bits of chopped apple and said it was delicious!  You’ve started something!
